Better for you Brownies

Better-for-You Brownies





RECIPE INGREDIENTS:
1/2 cup butter
8 ounces semisweet chocolate
1 cup sugar
1 cup light brown sugar
4 eggs, at room temperature
2 teaspoons vanilla extract
1/2 cup Purple Puree
1 1/2 cups flour
1/2 teaspoon salt
1 cup chopped walnuts or pecans

1. Heat the oven to 350°. Lightly butter a 9- by 9-inch cake pan and dust it with flour. Melt the butter and chocolate in the microwave at half power, then whisk until smooth.

2. Combine the sugars in a large mixing bowl. Add the eggs. Using a hand mixer, beat the ingredients on medium-high until well blended. Add the vanilla extract, the cooled chocolate, and the Purple Puree; mix on medium just until evenly blended.

3. Sift the flour and salt into a medium-size bowl, then stir them into the chocolate mixture until no streaks of flour remain. Stir in the nuts. Scrape the batter into the prepared pan and smooth the top with a spoon.

4. Bake the brownies in the center of the oven until they rise and the top has a thin, brittle crust, about 30 to 35 minutes. Transfer the pan to a wire rack to let the brownies cool. Makes 16 brownies.

                              HAPPY FATHERS DAY!!!

Amy is returning home earlier than the original plan.  Monday June 2nd, she is leaving for TX where she will stay for about 6 weeks. She has been very sick with this pregnancy and has an ovarian cyst that she needs to get looked at. She will also be taking the kids with her. After their time in TX, they will travel to WI where they will stay until I start my job with White Stone Community Church on September 1st.

Pray for a safe trip,

safe pregnancy,

plenty of rest and

plenty of study time for me in MX.

Star-studded Blueberry Pie


In summertime, blueberry pies crop up across America, but a truly special pie — like this one with a lemony berry filling and a crust decorated with stars — is worth celebrating.

Star-studded Blueberry Pie
Filling:
6 cups blueberries
2 teaspoons grated lemon zest
2 tablespoons fresh lemon juice
6 tablespoons all-purpose flour
3/4 cup sugar
1 unbaked piecrust (recipe below) plus extra dough
Crust:
2 cups all-purpose flour
1/4 teaspoon salt
3/4 cup (1-1/2 sticks) cold unsalted butter
4 or 5 tablespoons cold milk
Extra flour, as needed, for rolling the dough

Step 1
For the crust: Place the flour and salt in the bowl of a food processor fitted with a steel blade. Cut the butter into slices with a dinner knife and scatter the pieces on top of the flour.

Step 2
Pulse the flour and butter until they are combined and the mixture resembles a coarse meal. Add the milk a tablespoon at a time, pulsing after each addition, until the dough sticks to itself when gently squeezed.

Step 3
Transfer the dough to a lightly floured surface. Use your hands to shape it into two balls, one twice as large as the other. Using extra flour as needed to prevent sticking, roll the larger ball to fit a 9- or 10-inch pie pan. Wrap the smaller piece of dough tightly in plastic wrap. Refrigerate until ready to use. Makes a 9- or 10-inch piecrust, plus extra for a decorative top crust.

Step 4
Creating the filling and assembling the pie: Heat the oven to 375° F. Place the blueberries in a large bowl, and sprinkle with the lemon zest, lemon juice, flour, and sugar. Toss gently until the berries are evenly coated.

Step 5
Line a 9- or 10-inch pie pan with the rolled piecrust dough and crimp the edges. Pour the filling into the crust. Let your kids cut the extra dough into shapes with cookie cutters. Lay the shapes, touching one another, on top of the filling. Press any pieces that meet the sides of the crust into the edges.

Step 6
Place the pie pan on a foil-lined tray (to catch any spills) and bake in the lower third of the oven for 45 minutes or until the filling is bubbly around the edges and the crust is lightly browned. Serve hot, warm, or at room temperature. Serves 8.

New Baby On Its Way

I have had the privilege of teaching God’s Word to a local Mexican girl named Adriana. Nearly a month ago now she agreed to meet with me once a day so I could ‘practice teaching in Spanish’. For four weeks we met every day discussing Bible lessons in chronological order, beginning with Adam and Eve and working on through Cain and Able, Noah and the ark, all the way to Christ and His payment for our sins. This afternoon Adriana told me (in Spanish of course), “For my entire life I have been an enemy of God because I am a sinner, a child of Adam and Eve, but now I am a friend of God.” I then asked her how she could be so sure that she was a friend of God and had eternal life. She replied, “I decided to trust in Christ and what He did on the cross.” I asked her what else she needed to do. She replied, “There is nothing else to do. Christ did it all.”

Praise God along with us for this victory. And please pray that Adriana will continue to seek His face. She wants to continue to meet every day to continue the teaching.

No I was not robbed but this morning (Sunday) I was making breakfast when (right outside my kitchen window) a man came and snatched a lady’s purse. She ran off screaming after him and my heart was racing. Of course I could not do anything but I am hoping that guy was caught. (The girl was yelling really loud.)

Mexico

Our New Home!!!

God has blessed us with a new family to live with.  They have welcomed us with open arms and are great to live with.  Pray that we would be a blessing to them and not a burden.  Amy and I continue to have classes everyday and are coming along just fine in our spanish.  Pray that our ministry here would be fruitful.  Here are some pics:

Bee stings & a stun gun

Last time I was stung by a bee my mother rushed me to the hospital because my eyes and throat began to swell. 

Well, Saturday I was stung by a bee in my finger and instead of using my epi-pen we decided to use a gadget we bought at missions school for snake bites, bee stings etc… It is a stun gun that has been transformed into a venom neutralizing machine. We zapped my finger 10 times Saturday morning and waited to see the results. My figure swelled up but no other part of my body did. Thanks to God, Tim See`s mind, and the stun gun my life was saved!

Meet Our New Friends!!!!

We got the privilege of making some new friends here in Mexico.  Iexela and her mother Sondra took us on a hike outside of town today.  Jared II and Isaiah got to play in the river and we also found an old gold mine.  (No more gold though, I checked.)  We are enjoying learning the language and are looking forward to being a part of God´s work in Oconomowoc, and here also.  Thank you to all for your prayers!

Escuela!!!

Every day is another adventure as we learn new words, grammer, and concepts that don’t even exsist in the English language.  As of now we have nineteen more weeks of school left, and afterwards either more school or more time just living in Mexico.  Thanks to everyone for their prayers.  We miss you guys!!!  (click on any pic below to enlarge)

Isaiah´s First Kiss

With Isaiah and Jared II´s bright blonde hair they easily draw attention to themselves.  One day in middle of town one little brown eyed toddler just had to have a kiss from Isaiah.  What a romancer! (click on any pic to enlarge)

A Day in Mexico

Hola,

An average day in Mexico:

The kids wake up around 6:00-6:30. We all hang out, and Jared and I get a little studying in.  At 7:15 we have breakfast with our host family where we can practice our Spanish. Our Nanny gets in at 8:45 to take care of Isaiah, then we leave to drop Jared II off at school, and we start classes at 9:00.  I have classes from 9:00-1:00 then I pick Jared II up from preschool & get Isaiah from his nanny.  Jared has classes from 9:00-3:00.  After the kids wake up from their naps we hang out, buy groceries, and explore the city.  Once the kids go down at night (7:00) we study unitl we go to sleep.

We are really enjoying doing God´s will here in Mexico. Pray that God would open our ears & eyes to how this language works.  We love you! (click on the pics below to enlarge)

Horseback Riding!!!

Jared II, along with Amy and I, got the awesome opportunity to ride horses this Friday.  Some friends of ours (the Walker’s) generously let us ride their three beautiful horses (Faith, Lilly, and Pebbles).  Jared II had so much fun that I told him to ask Mommy for a horse next Christmas.  We had a great time together just enjoying God’s creation and can’t wait to move on to Mexico this Sunday.  Special thanks again to Barbara and Kendall for sharing their horses and time.

Off to Mexico

We only have one week left here at the MTC training. That sounds wierd to type since if feels like days ago we first arrived.

Friday,December 21st, we fly out to WI to visit friends and family. Then January 4th we fly to TX to visit friends and family. January 13th we fly to Mexico where we will begin classes the next day.

We have signed up for 5 1/2 months of classes as of right now. Sending a family of four down there + food + childcare + insureance + etc. = a great reliance on the Lord for finances.  We trust that He will supply us with what we need before we leave.
